Out of the private realm and into the public: Is there anything that would make Morgenthaler walk out of a bar – anything that would make a well-informed drinker turn around and look for a better watering hole? “The only bar I would walk away from would be someplace unsafe, from a sanitation perspective or a biker gang perspective.”


As to what makes a good bar, “It’s a question like, ‘What do you think is funny?’ I know it when I see it.” If a place feels right to you, and the ambience or a lack of cleanliness isn’t scaring you away, then stay and order drinks. Learn to make a few drinks well, and you can set yourself up at home.
